PAVARKAI URUGAI

Bitter gourd-1 big
Chillie powder-4-5tsp
Curry leaves-1 fistful
Dhaniya powder-2tsp
Salt- as needed
Jaggery-1tbsp
Tamarind-lemon size
Oil-6-7 tbsp
Mustard seeds-1tsp
Hing-1 tsp
Turmeric powder-1/2tsp
Method:-
Soak tamarind in warm water and take out juice.Wash bitter gourd and whip it clean.Cut into small pieces.In a pan heat oil and add mustard seeds.When it starts spluttering add hing and curry leaves and fry for few seconds and then add the chopped bitter gourd and fry for 2-3 mins.Now add salt,chilli powder,dhaniya powder and turmeric powder and mix well and fry till bitter gourd is cooked well in medium flame for about 10-12 mins.After that add the tamarind juice and grated jaggery and boil.Keep in sim and boil till all the water is evoprated and oil starts leaving the sides. It is really tasty and there is no bitterness of bottle gourd and goes well with curd rice.
