Ethiopian enjera with green lentil

 Enjera is made out of teff flower. Teff , the smallest grain in the world is a nutritional power house. It is very easy to make. Just mix 1 1-2 cups teff flour and 2 cups water until smooth, without any lumps . Cover and leave it in a warm place to ferment. 10 minutes prior to making enjera, add 1/4 tea spoon baking powder and 1/4 tea spoon salt. Stir well. Heat a dosai pan and stir in 1/4 cup of enjera batter. Do not spread it Cover and cook over medium heat for a minute or two. No need to flip it over. In Ethiopia, they make enjera every day, as we make idly, dosai. Enjera Would taste good with our idly molagapodi curd too
