BITTERGOURD (PAVARKAI) PICKLE

Heat oil in a pan and add mustard seeds. Once they crackle add asafoetida powder and green chillies(according to spice level). After a few seconds add the cut bitter gourd, turmeric powder and salt. Fry for a little while and add water sufficiemt enough for the veggi to cook. Once done add lemon juice ( according to tang level) and curry leaves. Best combi for curd rice.
