2 big cucumbers (peeling of skin is optional)-Cut into cubes. Pls remove the seeds ).6-7green chillies(my chutney is on milder side),Tamarind-1small gooseberry size,salt to taste,1/4
a tsp turmeric powder ,1/4 tsp hingu.
A small piece of jaggery (optional),
(Fresh grated coconut 1-2tbsp -optional)
Here in this recipe I have not used coconut .
Make a nice paste of the above Ingredients
remember NOT to use water,while grinding .
Method:
Now take a shallow pan ,add 2tbsp of oil.once it is hot add 1tsp mustard seeds.hingu ,lil turmeric powder again,few curry leaves.now add the grounded paste.mix and close the pan with a lid (to avoid the splattering of chutney ).allow this mixture on sim for 10-14 minutes .
Pls keep stirring in between.once all the water from the chutney evaporates,remove to a serving bowl .garnish with coriander leaves .enjoy this chutney ,with a plate of hot steaming rice ,a tsp of ghee or oil
