WINTER CARROT SPECIAL KURMA

Chop carrots into small pieces and cook till soft.
Chop one big onion finely. 

Slit two green chillies lengthwise.
Chop some coriander leaves finely.
In a kadai heat two tsps oil and add jeera ,slit green chillies and the chopped onions in that order.
Fry onions till light pink.
Add the cooked carrots, chilli powder ,coriander powder, turmeric powder,salt and mix well. Let it cook on low flàme.
In the meantime grind 10 cashews ,one tbsp of dry or fresh coconut scrapping, a tsp of saunf(sombu) and 2 cloves of garlic to a smooth paste.
Add this to the cooked carrot curry and mix well. Add little water to adjust the consistency to a gravy.
Finally add half a tsp of garam masala powder and coriander leaves and mix well. Serve hot.
