1. Soak a cup of Bengal gram for 6- 7 hours, grind it coarsely and prepare a coarse paste.
2. Add salt, chilli flakes ( prepared using grinding red chillies) , finely chopped ginger, garlic( 2-3 flakes) and chopped green chillies, saunf – 1 tbsp,red chilli powder – 1 tbsp, garam masala – 1 tbsp, chopped onions – ½ cup, chopped coriander and curry leaves, rice flour – 2tbsp to the above paste. Mix them well using hands.
3. Place a bowl with water along side for dipping hands while making portions .4. Make balls with the above mixure and press it with hands to get the shape of a vadai
5. Deep fry it in oil
