VEGETABLE THUVAIYAL

Saute in a drop of oil toor dal(a handful), g.chillies, ginger, grated copra, tamarind & keep aside. Then add some more oil, saute onions, any leftover vegetables(I added 2 brinjals, 5-6 kovakkais, a piece of marokai, 1 carrot). First grind the dal mixture, then these veggies with salt. Temper with mustard, red chillies, curry leaves. Tastes super!
